Abstract

In this study seven honey samples from three different cities of East Libya were collected in order to evaluate their biochemical properties and antioxidant activities. The results show that the proline content ranged from 77.32-222.43mg/kg. The total phenolic and total flavonoid contents ranged from 62.75-156.30mg/100g  and from 13.94-78.31mg/100g, respectively. While the carotenoids content ranged from 1.0-7.38mg/kg. The antioxidant activities of Libyan honey samples were also investigated, based on free radical scavenging and ferric reducing power activity. The results indicating that Libyan honey has a high antioxidant potential. The data of antioxidant activities were subjected to correlation using Pearson`s Correlation Coefficient. The results show the antioxidant activities of Libyan honey samples were significantly correlated with their biochemical properties analysed in this study.
